जब ताज़ा दूध दही में बदल जाता है तो pH कम हो जाएगा। ऐसा इसलिए होगा कि दही अधिक अम्लीय होता है। दही में लैक्टिक अम्ल होता है। जितना अधिक अम्ल होगा उस का pH उतना ही कम होगा।
